Day 126... Pumpkin cupcakes/muffins

I saw a recipe on Pinterest that called for 2 ingredients.. Two?? You read right just two. A box of yellow cake mix, and a can of pumpkin. Easy right?? I thought we would try it. I wondered what the verdict would be. Would they be dry, cake like seem like a cupcake or would they be more of a crumbly muffin??

The results: YUM we give them at least an 8 as is cooled out of the oven. The kids thought they were a mix between a muffin and a cupcake. A pumpkin muffcake??

We then decided to tweak the recipe by adding two more small but delicious ingredients. I cut into the muffin on an angle and cut out the top of the muffins. We then sprayed whipped cream inside, popped the top back on and sprinkled with just a tiny bit of powdered sugar. The verdict DELICIOUS!! My mom used to use this technique on cupcakes when we were kids except she would use Cool Whip. Loved it then and love it now. The only other thing we might add to make it absolutely perfect is some chopped pecans in the batter before cooking.
